The only major difference is that cooking a roast from frozen takes about 50% more time than if the meat was thawed.
What happens if you put frozen meat in the oven?
So if you put frozen meat in the oven, you will simply need to cook it for longer! If it would take 3 hours to cook a thawed roast in the oven it will now take about 4 hours and 30 minutes to roast.
You may also find the meat dries out more easily than if it was thawed beforehand. To combat this issue, you’ll have to baste it more often.
Is it better to cook a roast frozen or thawed?
Leaving your roast frozen while it cooks has a few negatives since it not only takes longer but also causes the roast to cook unevenly. This is because the meat still needs to thaw before cooking. So since the outer layer is the first to get thawed, it will cook faster while the innards may still be frozen and thawing. This will cause the outer layer of the roast to become dry and tough while the insides may still be frozen or raw.

How do you cook a frozen roast in the oven?
The best way to cook a frozen roast in the oven is by slow roasting it as this is similar to reverse searing. So all you need to do is preheat the oven to a temperature of 250 degrees. Put the roast in a large pan and cover it so the heat and moisture don’t escape. Then let it slow cook for about 4-5 hours.
How many minutes per pound to cook a frozen roast?
At 350 degrees F, it generally requires about 20-25 minutes per pound to cook a frozen roast to rare, and medium-rare will require 30-35 minutes. So if you were roasting 4 pounds of beef, it would take 1 hour and 40 minutes for rare and about 2 hours and 10 minutes for medium-rare.
Just keep in mind that the lower the temperature, the longer it will take for the roast to finish cooking.

It will take about 2 hours and 50 minutes to 3 hours to cook a 5lb roast at 350 degrees. At the end of the 3 hours, you should use a meat thermometer to check that the temperature is between 145 to 165 degrees F.
Can I sear a frozen roast?
Yes, you can sear a frozen roast. Since the roast is frozen it allows you to cook the outside of the roast at a high temperature. This way, the inside of the roast does not get cooked too much and stays cool because it’s still frozen. At the end you’ll get a nice sear on the outside and a perfect medium-rare inside.
I strongly recommend using the reverse sear method since its one of the most foolproof ways that allow you to sear the roast while its frozen. Using this method will guarantee that you get the best meat. It will be cooked all the way through and have a crispy outside crust.
How do you defrost a roast in the oven?
To defrost a roast with the oven, set the oven to about 135 degrees F or even lower. Put the roast in a pan and put it in the oven. Make sure you check it regularly to ensure that it isn’t actually cooking the meat.
How long can a roast sit out uncooked?
According to the Food and Drug Administration(FDA)Meat and other perishable foods should never be left out of the refrigerator for more than two hours. And if the room temperature is warmer than 40 degrees it should be put away even before the two hour time period.
Preferably as soon as you are finished serving and eating.
